Chicken Divan

INGREDIENTS

4 (6-ounce) boneless, skinless chicken breasts

2 cans cream of chicken soup

2 cups grated cheddar cheese

1 1/3 cups mayonnaise

1 1/2 tsp. curry powder

2-4 cups broccoli, chopped

1 tbsp. Lemon juice

DIRECTIONS

Preheat oven to 350 degrees F. 

Wrap raw chicken breasts in tin foil and place in medium glass casserole dish (8”x10”), cook for 30 minutes until chicken is cooked most of the way through. 

While chicken is cooking, combine cream of chicken soup, mayo, curry powder and lemon juice in bowl and set aside. 

When chicken is done, remove chicken from dish and let cool.  Once cooled, dice chicken into small cubes. 

Layer broccoli in the bottom of the dish, place cubed chicken on top of broccoli.  Spread soup mix from bowl over the chicken and cover soup mix with the cheese. 

Place in oven and bake covered for 30 minutes.  Remove tin foil and bake for another 10 minutes.  Let cool for 5 minutes before you serve.

Serve with butter and herb Farmhouse Rice.
