KFC Fried Chicken

INGREDIENTS

8 pieces of bone in chicken wings, thighs, legs or breasts

1/2 tablespoon salt

3 tablespoons white pepper

1 tablespoon black pepper

1/2 tablespoon basil

1 tablespoon celery salt

1 tablespoon dried mustard

2 tablespoons garlic salt

1 tablespoon ground ginger

1/3 tablespoon oregano

4 tablespoons paprika

1/2 tablespoon thyme

2 cups flour

3 eggs

1 cup milk or buttermilk

4 cups vegetable oil for frying

DIRECTIONS

In frying pan, heat oil to 350 degrees. Use cooking thermometer to get it exactly 350.

In a bowl, mix all of the spices with the 2 cups of flour. In a second bowl whisk eggs with milk. Start with 4 pieces of chicken and dredge each piece of chicken through the egg/milk mixture, let excess drip off, then dredge in spice/flour mixture. Place chicken immediate in the hot oil for 12 minutes exactly. After 12 minutes, remove chicken and place on cooling rack to set. Repeat dredging and cooking the remaining pieces of chicken.

*chicken will continue to cook after removed from oil so don’t cut open yet and don’t worry about it getting cold while the other chicken cooks.
